Recipe – Raw Choc Peppermint Bliss Balls

Some may think that moving to a primal diet is a bit restrictive. And yes compared to our standard modern diet there is a massive change. But the benefits as I have written about before are unbelievable.

But every now and then though you (well my family) come across little treats like these which is hard to believe they are “legal” as one of my clients puts it.

I admit I’m not the greatest cook, but thankfully my wife and kids are and the following recipe from http://www.mariposamoment.com/choc-peppermint-bliss-balls/ is an absolute cracker.

Try it for yourself…you might be surprised.

Even the kids love them.

Raw Choc Peppermint Bliss Balls

makes approximately 30

INGREDIENTS

– 2 cups medjool dates (pitted and chopped)

– 1 cup almonds

– 1/4 cup cacao powder

-2 tablespoons melted coconut oil (I used organic refined)

– 4 drops Peppermint essential oil*

METHOD

-combine chopped dates and almonds in a food processor

-process for 2-3 minutes, until slightly formed

-add cacao, coconut oil and peppermint essential oil

-process until it forms a dough-like ball, approximately 3-4 minutes

-remove dough and place on wax paper

-roll into bite-size balls and coat with desiccated coconut (I fill a small bowl with the coconut and roll the bliss ball around until completely coated!)

-place on a baking tray lined in wax paper & put in fridge to set

-remove and enjoy! (keep covered in fridge for best results)

Thanks to Sarah Kate from http://www.mariposamoment.com/ for this recipe.
